Easy MOIST and FLUFFY Chocolate Fudge Cake

I had a craving for chocolate and I looked for a quick version for the one with a fudgy result.  I looked up on Duncan Hines website for suggestion and found a few recipes.  I tweak the recipe a bit and it turned out great.  I like my cake to be moist and fluffy that gives a bite from pieces of chocolate.  I brought it in for my coworkers and they complimented on the moistness of the cake.  Here is the recipe!

  Ingredients:
1 box of 13.5 oz Duncan Hines chocolate cake mix (not the brownie one) or any other cake mix brand
1 cup of milk
3 large eggs (whisk to break up the eggs first)
1/4 cup of oil
1/3 cup of strained plain yogurt
1/2-3/4 cup of semi-sweet chocolate chips

Preheat the oven at 350 F.
Pour the cake mix in a big bowl.  Mix milk, eggs, oil and yogurt in another bowl till just blend.  Then whisk the wet mixture into the cake mix bowl and whisk till just blend a bit of lump is fine.  Add the chocolate chips
in last.  I added only 1/2 cup, but if you prefer to have a more gooey cake then add 3/4 cup instead.
Bake at 350 F for about 35-45 minutes or till when the cake looks firm and toothpick comes out clean.  Let it cool a bit before slicing into the chocolaty cake.  I dust mine with powdered sugar and push the Easter M&M candies on top of each divided portion.  Enjoy :)

Banana Cake

This is a banana cake that I made to bring for a gathering at my cousin's home.  I was made with creamy and healthy almond milk instead of the regular milk.  I decorated the top using vanilla pudding mix with almonds and cherries.

Vietnamese dessert- banh da lon (steamed layers rice cake)

Banh Da Lon

This is the Vietnamese steamed layers cake.  The traditional way is to have a layer of mung bean and a layer of pandan alternating.I used taro to substitute for the mung bean layers. It gave off a creamier and a flavorful  piece of chewy rice cake.
